Healthy Broccoli Pasta
I love pasta, the cheeses, the noodles, the satisfaction of loading up on carbs. But that’s not what pasta is about! This pasta dish is the perfect main course for when you’re low on meat and need to whip up a healthy meal for the family. And its under 240 calories per serving!
Ingredients Include:
- 2 cups of whole wheat fettuccini/penne noodles
- 3 tablespoons chopped green onion
- 2 cups broccoli florets
- 1/2 teaspoon of dried thyme
- 1/2 teaspoon of dried oregano
- 1/2 teaspoon of black pepper
- 1 can of stewed tomatoes
- 2 teaspoons grated Parmesan cheese or a low fat alternative
Place the noodles in a pot and cook until soft. Don’t put any oil, butter or salt in the water. Spray a pan with non stick spray and stir fry the green onions and broccoli for a few minutes on medium heat. Add the spices and tomatoes and simmer. Taste it, if it needs more oregano put it in. Spoon vegetable mixture over drained noodles and top with parmesan cheese.
Find a strong low fat cheese to complement the dish
You can add chilli’s and make it a chilli broccoli pasta
