Diet Sweet Potato Fries

I love potatoes. I stopped eating them when I went on the diet that made me lose weight. A friend then enlightened me about the delicious little spuds, that it wasn’t so much in the eating as it was in the preparation. But what if I want to fry them in oil to make them crunchy? There is a way! Here is a recipe for the best Sweet potato fries ever. Trust me they are even better than normal potatoes and so much better for you.

Ingredients Needed:

  • 1 Sweet potato (medium)
  • Some olive oil
  • ½ tablespoon of salt
  • One tablespoon of paprika

Directions:

Pre heat the oven to maximum heat and then turn it down to 190 degrees before I put them in. Peel your sweet potato and cut it in strips, like fries or in wedges. Pop the fries into a bag and add the oil, salt and paprika together. Shake them around until you can see all of the potato has been covered. Wrap a pan in foil and lay the fries out evenly on the surface of it. Leave them to cook for 30 minutes. It’s best to turn them every ten minutes or so, so that they cook evenly. Remove and serve!

Sweet Potato Chips

Ingredients Needed:

  • 2 sweet potatoes (medium)
  • Ice water
  • Olive oil
  • Salt to taste

Directions:

Peel your sweet potatoes and slice them very thinly with either a grater or a knife. Put the crisps into a bowl with the ice water and put them in the fridge for an hour. Drain them in the sink while you heat your olive oil in a deep fryer or a normal pan. When the oil is hot, fry the sweet potato in two batches to allow them to get enough oil for a few minutes or until you can see they are cooked. Lift chips out and drain them on paper towel. Add salt to taste and serve.
