Diet Cheesecake

No cake is ever going to make you thin, but never eating cake again is just silly. I love cake especially a nice cheesecake, to never have eaten it again all because I wanted to lose some weight would be ridiculous! So, for you ladies who feel the same as me, why not try a diet cheesecake instead. You get to eat it and minimize the damage to your thighs at the same time. Sounds like a win-win situation to me.

Ingredients Include:

Home made crust –

  • 1 and a half cups of finely crushed low fat vanilla wafers
  • ¼ cup of butter spray (they have no calories) or until workable

Cake –

  • 2 tubs of smooth fat free cream cheese
  • Nutrasweet to taste
  • 1 teaspoon of vanilla essence
  • 2 eggs or alternatively a half a box of egg-beaters
  • A little lemon rind if you wish

Crumb your vanilla wafers well until its fine enough to use. Add spray and mix. Grease out an oven proof dish and slowly press wafer crumbs flat onto the bottom and sides of it. A perfect crust should form. Make sure the base of the dish is covered.

Mix together your cream cheese, sweetener, and vanilla essence in a separate bowl. Add a few lemon rind shavings. Add your eggs last. Blend all of these ingredients until smooth. Pre heat your oven to 180 degrees. Pour mixture into your crust and bake in a pre heated oven for 40 minutes. Check to see if the centre is set by plying it with a fork. After baking remove Cheesecake and put it in the fridge where it will set for a further three hours before serving time. Serves eight people at about 125 calories a slice.
